4a1a222f73 vim: enable fortify when using clang
Our vim derivations have been disabling fortify for 10 years, due to a
crash at the time that had yet to be fixed upstream. The vim configure
script tries to strip out any `_FORTIFY_SOURCE` definition provided by
the caller in favor of setting `-D_FORTIFY_SOURCE=1` itself and cites a
crash introduced in gcc 4.0 as the reason, but our MacVim package has
been running with fortify enabled without any known issues. After
testing it seems that compiling vim with clang works just fine with
fortify, but compiling it with gcc detects a buffer overflow and aborts.

We do still need to disable `strictflexarrays1` though, as vim's
`ufunc_S` struct ends with a `uf_name[4]` field that is treated as a
flexible array with a minimum length of 4.

dd0f03a56c treewide: remove usage of deprecated apple_sdk framework stubs
They are not doing anything right now. This is in preparation for their
complete removal from the tree.

Note: several changes that affect the derivation inputs (e.g. removal of
references to stub paths in build instructions) were left out. They will
be cleaned up the next iteration and will require special care.

Note: this PR is a result of a mix of ugly regex (not AST) based
automation and some manual labor. For reference, the regex automation
part was hacked in: https://github.com/booxter/nix-clean-apple_sdk

667d42c00d treewide: format all inactive Nix files
After final improvements to the official formatter implementation,
this commit now performs the first treewide reformat of Nix files using it.
This is part of the implementation of RFC 166.

Only "inactive" files are reformatted, meaning only files that
aren't being touched by any PR with activity in the past 2 months.
This is to avoid conflicts for PRs that might soon be merged.
Later we can do a full treewide reformat to get the rest,
which should not cause as many conflicts.

A CI check has already been running for some time to ensure that new and
already-formatted files are formatted, so the files being reformatted here
should also stay formatted.

15ebfa7be7 vim: Harden build against ex and other tools being missing
Those tools are often used as build-time dependency. Some deficiencies
in the upstream makefiles makes it possible that they will not be
installed, even though the `make install` call was successful.

This *could* make the `vim` build fail where it wouldn't have failed
previously, but it will now fail in a correct manner instead of being
incorrectly successful.

The previous patch (actually using -j1 in install phase) should make
this change redundant, but let's not pretend new bugs are never going to
happen!

cac4d6469f vim: fix shebangs when cross-compiling
vim does its own shebang patching, which ends up pulling in build platform
tools. This commit patches the build system to use HOST_PATH instead.

I also enabled strictDeps and added additional dependencies needed to make
patchShebangs work on some of the other scripts.

This commit brings the cross-compiled package in line with the native one, but
even the native build has some unpatched shebang references to python, perl and
csh. Additionally, efm_perl.pl has a broken shebang (#! -w) because vim's
build system can't handle not finding perl.

9bb3fccb5b treewide: pkgs.pkgconfig -> pkgs.pkg-config, move pkgconfig to alias.nix
continuation of #109595

pkgconfig was aliased in 2018, however, it remained in
all-packages.nix due to its wide usage. This cleans
up the remaining references to pkgs.pkgsconfig and
moves the entry to aliases.nix.

python3Packages.pkgconfig remained unchanged because
it's the canonical name of the upstream package
on pypi.

0cad2e7af1 vim: Disable hardening flag fortify
Fortify hardening detects a probable buffer overflow in vim at runtime. This
has to be fixed upstream.

Debian also disables fortify:
