libresplit: unpin gcc15Stdenv

libresplit pinned this in order to get features that were not in gcc 14,
the default at the time: https://github.com/NixOS/nixpkgs/pull/454352#discussion_r2527094601 .
now, gcc 15 is the default and this will prevent libresplit from
automatically being able to leverage features from gcc 16 and newer as
we update, so lets drop the pin given it's no longer necessary.
