linux-manual: fix build with Linux 7.3

The most recent bump to the linuxPackages_latest causes this package to fail, due to an introduction of `os.environ["srctree"]` without a fallback. `build-sphinx-wrapper` defines `srctree` with the default value `"."`, so lets set it before invoking the script.
