copier-template-tester: 2.2.0 -> 3.0.0

Switch from poetry-core to uv_build to match the new upstream build
backend. Requires corallium >= 2.3.0, satisfied by the previous commit.
Notable change: every output directory is emptied before rendering, so
the first run after upgrading shows a real diff for templates using
_skip_if_exists.
