bat: genericize shell init for bat-extras packages
...
Moves shell init logic specific to bat-extras packages into the
extras packages themselves. The bat package itself is now only
reponsible for registering the bat-extras shell inits. Also uses finalAttrs.finalPackage to correctly handle overlays on bat-extra packages.

tdarr: fix update script to handle non-ASCII zip entries
...
nix-prefetch-url --unpack uses libarchive which fails on zip files
containing non-ASCII filenames. Replace with curl + unzip + nix hash path
to avoid the locale issue.

GRUB allows setting BUILD_PKG_CONFIG to a pkg-config that provides libraries for the building platform,
which is needed to get the correct freetype for build-grub-mkfont.
